Torta Sacher. Basta il nome e le espressioni sono già spiazzate. Quelle che non lo sono non hanno idea della portata di questo nome. Da quando ho iniziato ad amare la pasticceria (e a pasticciare, certo) credo di averne provate 8 o 9 versioni. Una peggio dell’altra. La prima(avrò avuto 15 anni) era un mattone. E come tutte le ricette riuscite coi piedi mi ci sono puntata. Anche perché dai, La Sacher. Lasciarla andare così dopo qualche fregnaccia è da scellerati. Dopo anni di ricerche e maturazione anagrafica sono arrivata alla versione PERFETTA. Ma che dico, SUBLIME. E non parlo di una ricetta rubata all’omonimo Hotel che si fa pagare fior fior di quattrini un quadratino di dolce.. parlo della ricetta di Ernst Knam. Il re televisivo del cioccolato, che su Bake Off fa un po’ di scenate ma non importa, le sue ricette sono magnifiche, e allora gliele perdono. Il mio 2015 è partito con una Sacher. L’ho portata al party(diciamo così, che fa più in…) post cenone, e l’ho offerta a persone con gusti diversi e abitudini diverse. Bene, ho ricevuto i complimenti da tutti. Questo capolavoro di torta è giunto quindi al capolinea della ricerca-della-ricetta. Ho messo al guinzaglio i cani da tartufo. Se volete provarla, poi sono sicura che lo farete anche voi. E’ così che voglio augurarvi un Buon 2015, un po’ in ritardo certo, ma vogliate perdonare la mia assenza nel vecchio blog e il lento passaggio a questo nuovo… ci sono stati un po’ di disguidi tecnici (del tipo che il vero tecnico mi ha reso il pc ieri sera dopo averlo a lungo ospitato nel suo covo di elettronica). Vorrei per voi che questo 2015 fosse la fine della ricerca-della-ricetta: fine intesa come inizio di una nuova fase di armonia e serenità, target accomplished insomma! Vorrei che riusciste a trovare quello che a lungo avete cercato, e vorrei che vi capitasse sorprendendovi, perché la meraviglia è un sentimento a cui sono molto legata, e non posso che augurarla a tutti voi. Vorrei per voi un anno di bellezza. E di bontà. E mi sembra che iniziare con una Torta Sacher sia proprio la scelta giusta per fare avverare tutti questi vorrei. TORTA SACHER DI ERNST KNAM (per una tortiera da 20-23 cm) Ingredienti · 75 g cioccolato fondente 55% a pezzetti · 65 gr burro · 20 gr zucchero a velo · 1 bustina di vanilina · 3 tuorli · 3 albumi · 90 gr zucchero semolato · 65 gr farina 00 o 0 · 1 pizzico di sale · 170-190 gr confettura di albicocche · burro & farina per lo stampo per la glassa: · 250 ml panna liquida · 370 gr cioccolato fondente 55% a pezzetti Procedimento Preparare l’impasto: Mettere il cioccolato fondente in una ciotola e farlo sciogliere a bagnomaria su fuoco lento (l’acqua non deve bollire né toccare il recipiente). In una ciotola di vetro montare a neve ferma gli albumi con lo zucchero semolato. Porre in frigo subito. In un’altra ciotola capiente di vetro montare con un frullino/una frusta il burro con lo zucchero a velo, il sale e la vanilina. Vi ci vorrà un po’, il burro dovrà essersi ammorbidito e formare una crema salda (se il frullino ve lo fa schizzare lavorate prima un poco con un cucchiaio). Unite ora i tuorli leggermente sbattuti, azionando sempre il frullino a minima/media velocità. Quando il composto è bene amalgamato unite a filo il cioccolato fuso, continuando a bassa velocità. Unite ora al composto anche gli albumi: dovrete amalgamarli delicatamente con un cucchiaio, mescolando sempre dal basso verso l’alto. Infine aggiungete la farina un po’ alla volta, setacciandola. Usate sempre il cucchiaio. Il composto dovrà essere omogeneo senza grumi. Versate ora l’impasto in uno stampo imburrato e infarinato di non più di 23 cm di diametro. Ponete in forno preriscaldato a 175°C per 35-40 minuti. Controllate se è pronto infilando uno stecchino al centro prima di estrarre dal forno. Lasciate raffreddare completamente la torta nello stampo prima di toglierla, capovolgendola. Tagliatela a metà in senso orizzontale e farcitela con la confettura di albicocche. Avanzatene: dovrete usarla anche sulla superficie della torta e sui lati. Preparate ora la glassa, o ganache: versate la panna in un pentolino e portatela ad ebollizione. Appena raggiunge questo stadio toglietela dal fuoco e aggiungete il cioccolato fondente. Mescolate con un cucchiaio di legno fino a che si raddenserà; il cioccolato dovrà essersi sciolto completamente. Versate sulla torta. Ponete la torta in frigorifero per 30 minuti prima di scrivervi SACHER con un cornetto di carta forno e la ganache rimasta. ENGLISH VERSION Sachertorte. A name, and faces are thrilled. The ones who are not have no idea of the real entity of this name. Since I started to interest myself in pastry(and consequently messing my kitchen) I think I’ve tried 8 or 9 versions of its recipe. The first time(probably I was 15), it was a heavy and unrecognizable thing. As every recipe I failed with, I stitched on it. C’mon, the Sachertorte. Letting the whole thing go away after some bad try was not the way. After years of research and maturity I have finally found the PERFECT version. Oh, well, it’s SUBLIME. And I’m not talking about a recipe I’ve stolen to the homonymous Hotel (the one demanding a lot of money for a tiny spot of cake)… I’m talking about Erns Knam’s recipe. The televion’s greatest chocolate king, the one who’s terrifying in Bake Off Italia, but who cares, his recipes are great and I can forgive all his forced shows. My 2015 started with a Sachertorte. I brought it to the party we had after dinner, and I gave it to people with different tastes and habits. Well, I got a lot of compliments. This masterpiece is, therefore, the end of the search-for-the-recipe phase. I’m sure that if you’ll try this recipe you will do the same. And this is the way in which I want to wish you a Happy 2015; I’m late, ok, but there has been technical problems(kind of my technician gave me my pc yesterday evening after its long séjour in his electronic cave). I want you to end your recipe’s endless search in this 2015: an end that will be a new beginning of harmony and serenity, target accomplished, I mean! I want you to find what you’ve looked for for a long time, and I want you to be surprised of it: la meraviglia. I cannot translate it this time, look for la meraviglia. It’s something I’m deeply bounded to, and I wish you to be bounded to too. I wish you a year full of La grande bellezza (another thing I cannot translate :) Don’t hate me). And of goodness. And I believe that starting with a Sachertorte is clearly a nice way to make this wishes come true. SACHERTORTE (by ERNST KNAM) – for a round pan with 20-23 cm of diameter Ingredients · 75 gr dark chocolate (55%) chopped · 65 gr unsalted butter · 20 gr sifted sugar · 1 tsp vanilla extract · 3 egg yolks (medium) · 3 egg whites (medium) · 90 gr white sugar · 65 gr all purpose flour · half of a tsp salt · 170-190 gr apricot jam For the chocolate ganache · 250 ml heavy cream (liquid) · 370 gr dark chocolate (55%) chopped How to proceed Start with the cake. Put the dark chocolate in a glass bowl and put the pan on a casserole filled with boiling water(no contact between the bottom of the glass bowl and the water). Let the chocolate melt slowly. In another glass pan combine the egg whites with the sugar and beat with the mixer at a medium speed until stiff peaks form(2-3 minutes). Put immediately the bowl in the fridge. In another glass bowl combine the butter with sifted sugar and vanilla extract. Beat with the mixer on low to medium speed until light and fluffy. With a low speed add the egg yolks. Then add the melted chocolate until each addition has been well incorporated. Add the egg whites too and use a spoon to incorporate them, whisking slowly from the bottom to the top. Finally add the flour. Use a bit of butter to oil your cake pan and then put some flour to make your pan’s internal surfaces to prevent the cake to stick on them. Bake for 35-40 minutes at a temperature of 175°C. Bake until a toothpick inserted in the center comes out clean, then let cool completely. Cut your Sachertorte horizontally in two parts and then spread on your center’s cake ¾ of the apricot jam. Cover with the second half of your cake. The rest of your jam has to be spread on the top and the sides. For the ganache: put the heavy cream in a casserole and make it boil. Take it away from the heat and put in it the chopped chocolate. Whisk until it has completely melted. Use the ganache to cover your Sachertorte. Let the cake refrigerate for 15-20 minutes before writing the word “Sacher” on the top of it with the rest of your ganache.
