Lasciate riposare 2 ore. Servite fresca. ENGLISH VERSION They say Valentine’s Day’s here. And a lot of aphrodisiac food’s lists come out. Everywhere. I think the Saint is an a corner, scared eyes, watching all this. Among the thousands of recipes in the Internet there’s the couple of ingredients: chocolate & red hot pepper. For me it’s really funny thinking that red hot pepper is considered an aphrodisiac element. In my mind its incredible powers activate themselves not because of cells/organs/enzymes… they activate because she eats a tiny slice of cake and intimates him to eat it too, she shakes her head assuring it’s not hot, so he trust her and puts in his mouth a slice of cake too. He smiles quietly, then little less and then he doesn’t smile at all, the eyes are out of head and the red hot pepper is really hot, it’s terrible, he almost cries because it’s hard to bear, gosh; she laughs at him, tears in her eyes, he shakes his hand at his mouth trying to stop that torture, looking for water, bread, and finally when he drinks that blessed water they both have tears in their eyes’ corners, suddenly there’s silence after that kind of crazy atmosphere, and then there’s no more physical distance between them, and their fingers touch one’s other and their lips curve into a smile, and everything becomes a new promise. So, to me this is the aphrodisiacal power of red hot pepper. I want to write of it too, but not because Valentine’s Day’s almost here. I’ve tried a recipe I stored long ago in my tiny box and the results have been totally unexpected. My sister helped me in the making: we both were curious about watching the red dust fall into the sauce that will meet the filled with holes cake’s surface, later… It was a nice experiment. Absolutely it needs no limitation in time to prepare it (that is to say: don’t prepare it in February only!!). INGREDIENTS 100 gr all purpose flour 1 tsp baking soda 25 gr Dutch-process cocoa powder 140 gr sugar 40 ml heavy cream + a bit of lemon juice 70 ml hot water 90 gr melted butter (unsalted) 90 gr dark chocolate chopped (coarsely) 1 egg 1 tsp vanilla extract For the chocolate sauce: 70 ml water 50 gr sugar ½ tbsp. cocoa powder red hot pepper dust (as you want) HOW TO PROCEED Mix all the dry ingredients in a bowl: flour, baking soda, cocoa powder, sugar, vanilla. In another bowl mix together the egg, the heavy cream and the melted butter. Beat on medium-low speed until the ingredients are completely melted. Now add in three times the dry ingredients, always maintaining the medium-low speed. Add slowly the hot water too. Blend in also the chocolate. Pour the batter into a plumcake pan, precedently covered with non-sticking paper. Bake in the oven at 180°C for 1 hour. Use a toothpick to check if it’s ready. While baking prepare the sauce: in a small saucepan combine water, sugar, cocoa powder and red hot pepper dust. Stir well and set over medium heat. Let the sauce boil for about 5 minutes before switching off the fire. When the cake is ready transfer the plumcake pan on a working surface and immediately make some holes in the cake with a toothpick. Don’t be shy! When you have finished pour the sauce in the plumcake pan and let the cake absorb it. Let the cake cool for 2 hours. Then serve cool.
